About us
Two people, olive groves in Jaén chosen one by one, and a difficult decision: pick the olive while it is still green.
Our story
Verdeliss comes from two people with a clear idea: to take something as much ours as olive oil to the highest point possible. We decided to do it the way we believe it should be done: no shortcuts, no rush and no compromises.
We went to Jaén, but not looking for volume. We selected one by one the groves able to give something different: the ones with that balance of intensity, freshness and character. The difference is not built afterwards. It is chosen from the start.

The early harvest gives less oil and demands more precision. It is the only way to catch it at its liveliest.
10 kg of olives per litre

No heat involved, which would carry the aromas away. The colour it comes out with is the olive’s, not that of a later adjustment.

Glass, a label with its lot and harvest, and a case that protects it from light. Looking after the packaging is looking after the oil.
500 ml bottle
The oil coming out of the decanter, still unfiltered. That colour is not corrected afterwards: it is the colour of the green olive.
Let us talk about price
It is not an expensive oil because of the bottle. It is expensive because it takes far more olives to fill it, and because it is picked at the moment the grove gives least.
of olives per litre. In the early harvest the fruit has not yet put on fat, so it takes about ten kilos to fill a bottle: a good deal more than waiting for it to ripen.
a year, with no second run. We only bottle what the selected groves give that harvest. We do not top it up with oil from elsewhere when it runs out.
and no refining. Every bottle is a single variety, Picual or Royal, never cut with cheaper oils to bring the price down.

The way we see it
We bottle what the selected groves give each harvest. When it runs out, you wait for the next one. We would rather the people who taste it rate it than be stocked in more places.
